Cassava (Manihot Utilissima) is a tuber that popular in Indonesia as primary food. The diameter is about 2-3cm and 50-80cm length. It is white.
The tuber is a good source of carbohydrate but has a low content of protein. A good source of protein is cassava's leaves because it contains amino acids.
The tuber contains a lot of glucose and can be eat uncooked. And it also can be various dish, it can be fried, stewed, or grilled. Cassava flour can be the substitute of wheat flour.
And these are the contents of cassava:

  • Phosporus
  • Carbohydrate
  • Calcium
  • Vitamin C
  • Protein

  • Fat
  • Vitamin B1
The advantages of cassava:
  • Cassava has a lot of advantages, it can be served as traditional dish, snack or primary food. It has a unique taste and good for health.
    The scientist said that cassava can be a good food or medicine, it has antitumor, anticancer, and antioxidants effect.
  • The leaves also have a good contents and it also can be a various dish.
    Cassava contains calory, protein, fat, carbohydrate, calcium, phosporus, iron, vitamin B and C, and starch. The leaves contain vitamin A, B1, and C, calcium, calory, phosporus, protein, fat, carbohydrate and iron. And the bark contains tannin, peroxidase enzyme, glicoside, and oxalat calcium.
  • Besides as food, it also can be a medicine. It can treat rheumatic, headache, cold, wound, diarrhea, dysentery, night blindness, beri-beri, and can increase power.
    Cassava is very good for health. It well-known as a good source of vitamin A. Vitamin A good for eyes, skin and bones.
  • Cassava also known as antioxidants, prevent infection, good for digest system, good for ureter, and also good for lungs.
  • Cassava also a good source of vitamin C, copper, vitamin B6, iron, calcium, potassium and mangaan, it also contain high fiber.
  • Alternative carbohydrate for diet. Cassava is a source of carbohydrate and has low fat, so it's good for diet program. And it also good for diabetes patients, because it has a high carbohydrate as rice or wheat flour but not affect insulin level.
    The fiber content can control hunger, because it keeps stomach full. High fiber can prevent diverticulosis, hemorrhoids, etc.
